Ricotta and Raspberry Parfait


1 cup ricotta
½ tsp Natvia (optional)
1 lime, zested
1 tbls rice milk
½ cup raspberry coulis

2 cups fruit salad with mint


Blend the ricotta with the Natvia, zest and rice milk. Taste and adjust sweetness if needed.
In a long glass, place a tbls of fruit salad then some coulis, then ricotta sauce. Keep layering until ingredients are all used.
