1 cup self raising flour
½ cup corn flour
1 tsp baking powder
1 cup (approx.) of beer
white fish, cut into 2cm strips
oil for frying
Whisk gently the batter ingredients together until there are no lumps in the batter mixture. Over whisking can cause the batter to become really tough.
Coat the fish lightly in flour then in batter and carefully lower the fish one-by-one into a heated pan with about an inch thick of hot oil, shallow frying the battered fish on each side until golden.
Place the fish on a wire rack once cooked and season with salt while still hot.
