Rice Pudding

Serves 4
Time 30 minutes


1 cup coconut milk
1 cup almond milk
1 cup brown rice, cooked
ΒΌ cup brown rice syrup
1 tsp cinnamon
2 tsp vanilla paste
1 tbsp goji berries


To serve
Toasted coconut


In a medium saucepan, add the coconut milk, almond milk, brown rice, cinnamon, brown rice syrup, goji berries, vanilla and a pinch of salt. Bring up to the boil, then reduce heat and simmer for about 25 minutes to reduce and thicken.

Divide the cooked rice pudding between serving glasses or bowls and top with walnuts, blueberries and coconut to serve.
