Raw Kingfish Ceviche


500g king fish, sliced thinly

1 lime, juiced

2 lemons, juiced

2 chillies, red and green, de-seeded and finely chopped

1 red capsicum, diced finely

1 cucumber, diced finely

1 bunch coriander

1 bunch chives

micro herbs (baby coriander, baby chives)

extra virgin olive oil

salt and pepper


In a bowl mix the lemon and lime juice with the finely diced cucumber and capsicum, chilli and herbs. Add olive oil and mix together. Carefully place the sliced fish on a plate. Season with salt and pepper. Cure the fish with spoonfuls of the dressing and serve.
