500g baby cucumbers, cut into rounds
1 bunch parsley, finely chopped
½ bunch dill, finely chopped
½ red onion, finely diced
5 spring onions, finely sliced
3 tbsp white vinegar
3 tbsp extra virgin olive oil
1 tbsp sugar
Good twist black pepper
Lightly toss cucumber slices, onion slices, and chopped dill together in a large bowl.
Pour vinegar over cucumber mixture; toss to coat.
Pour oil over cucumber mixture; toss to coat.
Season with salt, black pepper and sugar, toss again to dissolve.
