Quinoa and Oat Porridge with Stewed Pear

Time 20 minutes


1 pear, peeled and diced
3 tbsp water
Pinch cinnamon
½ cup rolled oats
½ cup quinoa flakes
2 cups milk
½ tsp ground ginger
½ tsp cinnamon
Pinch nutmeg
Pinch salt

To serve

Toasted shredded coconut


Add the pear, water and cinnamon to a small pan over medium heat and cook for about 5-10 minutes until softened. Set aside.

In a saucepan over medium heat, add the oats, quinoa flakes, milk, ground ginger, cinnamon, nutmeg and a pinch of salt. Stir to combine then simmer for about 10 minutes until creamy.

Stir through the stewed pear and serve with pistachios, toasted coconut and honey on top.
