¼ cup extra virgin olive oil?
1 small Spanish onion finely chopped
½ tsp. chilli flakes
½ tsp. sea salt?
4 medium cloves of garlic, finely chopped?
1x400ml can crush tomatoes
Zest of one lemon
1 tsp. dried basil
1 tsp. dried parsley
2-4 cups cooked pasta of your choice; spelt, wholemeal, durum wheat pasta
Fill a large saucepan with water and bring to the boil. Place the pasta into to the boiling water and cooked till al dente.
In a large frying pan combine the olive oil, Spanish onion, chilli flakes, sea salt, herbs and garlic, sauté for 5 minute.
Stir in the tomatoes and heats to a gentle simmer, this takes just a couple minutes. Stir in the lemon zest reserving a bit to sprinkle on top of your pasta.
Once the pasta is cooked drain the water and stir the pasta with the tomato sauce. Season to taste.
Serve with sprinkled feta cheese and lemon zest.
