Quick & Easy Couscous

Serves 2
Time 10 minutes


1 cup couscous 

1 cup boiling water

½ chicken stock cube 

¼ cup peas

¼ cup carrot, peeled, finely diced

¼ cup currants

Salt & pepper

1 tbsp extra virgin olive oil

1 bunch parsley 


Place couscous, stock cube, peas, carrot, currants, salt, pepper, olive oil and water in a deep bowl. Use a fork to stir everything together. Cover with cling wrap and let stand for 5 minutes. 

Use a fork to stir the couscous, fold through freshly chopped parsley before serving.
