Pumpkin & Coconut Bread

Serves 8-10
Time 1 hour + 30 minutes


1 cup cooked pumpkin puree

½ cup coconut oil 

½ cup maple syrup 

4 eggs

1 tsp baking powder

Pinch cinnamon 

½ tsp bicarb soda

1 tsp vanilla bean paste

¼ cup almond meal 

¾ cup coconut flour

¼ cup coconut sugar 


To serve

Double cream

Preheat the oven to 160C degrees. Prepare a loaf tray with baking paper.

In a large bowl, whisk pumpkin puree, coconut oil, maple syrup and eggs together. Add baking powder, cinnamon, bicarb soda, vanilla bean paste, almond meal, coconut sugar and coconut flour. Stir until well combined. 

Pour the batter into the lined tray. Bake for 1 hour, it will continue to set as it cools. Allow to cool in the tray, serve with cream, strawberries and sprigs of mint.
