Pumpkin and Spice Muffins


Two eggs (or one egg and two egg whites)
¼ cup olive oil
½ cup raw honey
¼ cup unsweetened applesauce
1 cup mashed, cooked pumpkin
1½ cups brown rice flour
½ cup Soya flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
½ tsp. allspice
½ tsp. sea salt
½ cup raisins (optional)
½ cup chopped nuts
½ cup full cream milk


Preheat oven to 160C.

Beat eggs well, add honey, oil and pumpkin. Sift all dry ingredients and mix well. Mix through the milk and applesauce.

Stir in raisins and nuts. Fill paper-lined or greased muffin cups 2/3 full.

Bake for 20 minutes. Rotate tins once to brown evenly.
