Pulut Hitam (Black Rice Pudding)

1 cup black rice, rinsed and drained
2 cups water
½ -1 can AYAM coconut milk
¼ cup maple syrup and ¼ cup water
¼ cup toasted coconut flakes
¼ cup goji berries soaked in orange juice (should be soft), drained
1 tsp cardamom
1 star anise
pepitas to garnish
coconut yoghurt to garnish


Place rice in a saucepan with water, bring to the boil and simmer. Meanwhile add the maple syrup, cardamom, star anise and water to a small saucepan, bring to the boil and simmer until a slightly thick syrup forms.

When the rice is just cooked, add the coconut milk, and the juice from the soaked goji berries and stir through.
Plate up the rice, pour the syrup over it as desired, and top with toasted coconut flakes, pepitas, soaked goji berries and a dollop of coconut yoghurt.
