250g multigrain protein pasta
1 bunch broccolini, cut into small pieces
½ bunch kale, finely chopped
¼ cup extra virgin olive oil
2 garlic cloves, sliced thinly
1 large chicken breast (200g), sliced thinly
1 tbsp chilli, finely chopped
½ cup parsley chopped
½ cup grated pecorino
Salt & pepper
In a large pot, fill ¾ full with water and bring to a boil.
Once boiling, add broccolini and kale. Cook for 2 to 3 minutes or until just tender. Remove and place into a bowl.
Add pasta to the boiling water and cook as per packet directions.
In a pan heat oil, garlic, chilli, chicken and anchovies. Sauté for 3 to 5 minutes or until chicken is cooked.
Next, place broccolini and kale into the pan. Use a wooden spoon to break apart the broccolini into small pieces and mix it into the sauce.
Add half a cup of pasta cooking water to the pan.
Strain pasta and add it into the pan along with parsley and pecorino. Season with salt and pepper.
Toss together and serve immediately.
