Probiotic Omelette

Serves 1
Time 15 minutes


3 eggs
2 tbsp kefir
½ tsp turmeric
1 pinch salt
1 pinch pepper
1 tbsp coconut oil
¼ cup capsicum, chopped
½ block feta cheese, cubed
2 tbsp sauerkraut
1 handful rocket
1 radish, sliced
1 tbsp avocado oil


In a medium bowl beat eggs, kefir, turmeric, salt and pepper until well combined.
Place frying pan  on medium heat and melt coconut oil.
Turn heat down and pour egg mix into pan and let cook for 3-4 minutes or until set underneath.
Sprinkle with capsicum and feta cheese.
Sprinkle with sauerkraut and fold when you see the top of the egg has set.
Carefully place on a plate and top with rocket, radishes and avocado oil to serve.
