Prawns wrapped in Prosciutto

Serves 2 as an entree
Time 20 minutes


10 prawns, shells removed and deveined 

100g prosciutto 

Salt & pepper

1 tsp extra virgin olive oil 



1 large spring onion, finely chopped  

1 tbsp lemon juice 

1 tbsp Extra virgin olive oil 

Salt & pepper


Wrap prawns in strips of prosciutto. Place on a skewer, all facing the same way, you should be able to fit 5 prawns on each skewer. Season both sides generously with pepper and a small pinch of salt. Drizzle a tiny amount of extra virgin olive oil and spread over both sides. 

Place the skewers on a hot grill pan, cook for 3-4 minutes on each side. 

In a small bowl stir the spring onions, lemon juice, salt, pepper and extra virgin olive oil.
