Prawns, Mussels and Clams in a Paper Bag

Ingredients

8 green prawns, shelled and deveined

4 mussels

6 clams

1 clove garlic, crushed

Handful of parsley, chopped

2 tbls fennel tops, finely chopped

½ cup white wine

1 tsp saffron

2 spring onions

1 red chili, chopped (optional)

Sea salt and cracked pepper

Wax paper

Method

Tear 4 pieces of paper about 30cm each. Use two pieces for each parcel. In the centre of each place half of the seafood, then the other ingredients. Fold the edges of the paper so it creates a kind of bowl then carefully pour half the wine into each parcel. Place on the Barbie for about 5 minutes then leave in the bag to continue cooking for another 2-3 minutes. Serve in the bag. You may want to have a sheet of tin foil outside the wax paper, an/or place it in a tin foil tray on the bbq.
