1 bunch coriander, chopped
1 tbsp. fresh or ground turmeric
500 mls yoghurt
½ tsp chilli powder
½ tsp ground coriander
7 garlic cloves, crushed
1 tbsp. ginger
1 brown onion, diced
2 limes, juiced
2 tbsp olive oil
½ tsp. cardamom pods
½ tsp. cloves
½ tsp. peppercorns
In a spice grinder or mortar and pestle, mix together spice mix ingredients. Set aside.
In a large bowl, add the yoghurt, a pinch of the spice mix, chilli powder and ground coriander. Mix well. Set aside.
In another bowl, mix together the fresh turmeric and coriander stalks Add prawns and stir until well coated.
Heat oil in a deep frying pan over a medium to high flame. Add the remaining spice mix and fry for 1 minute or until fragrant.
Add onion, garlic and ginger. Sauté for 3 – 4 minutes or until onions begin to soften.
Add prawns and yoghurt to the pan. Season with salt and pepper.
Cook for 3 – 5 minutes or until prawns are cooked through.
Stir through coriander leaves and lime juice.
Serve with steamed rice.
