Prawn Stir Fry on Coconut Rice

Time 20 minutes

Ingredients

400g of prawns – peeled and deveined

2 tbsp olive oil 

2cm piece ginger cut finely

2 garlic cloves sliced

1 red chilli deseeded and chopped

1 bunch broccolini trimmed

10 snow peas sliced

4 tbsp sweet chilli sauce

Juice of 1 lime

Coriander chopped to serve – about a cup 

1 packet coconut, chilli and lemongrass steamed rice

Roasted sesame seeds to serve

Method

Heat oil in a pan and add ginger, garlic and chilli for 2-3 minutes. 

Add prawns and cook for 3-4 minutes. 

Remove this from the pan and set aside. 

In the pan add broccolini with a small amount of water and cook for 3 minutes, just to soften slightly, add the snow peas and then stir through the sweet chilli sauce and lime juice. 

Place the prawns back into the pan and stir through the coriander at the last minute. Serve on a bed of coconut, chilli and lemongrass rice and sprinkle sesame seeds on top.
