Prawn Roti Bread Omelette

Ingredients

2 tbsp extra virgin olive oil
1 roti bread
3 whole eggs, beaten
1 tbsp soya sauce
6 prawns, chopped
1 garlic clove
1 small shallot
1 red chilli, chopped
3 spring onion, chopped
½ bunch coriander, chopped
1 cup bean shoots
1 tbsp toasted sesame seeds
1 tbsp Japanese mayonnaise (optional)
salt and pepper to taste

Method

Crisp roti drizzled in a little olive oil, in the oven for about 5 minutes at 180C. Once cooled, break into small pieces.

Sweat the shallots, garlic, spring onion and chilli in a hot pan with olive oil.

Once softened add the chopped prawns until just cooked.

Pour in beaten eggs mixed with soya sauce and seasoned with salt and pepper to taste, move it around the pan until the egg covers the base.

On one half of the pan add bits of crisp roti, coriander, spring onion, bean shoots and sesame seeds. Fold in half, add a dollop of mayonnaise and serve.
