Prawn & Ginger Stir Fry

¼ cup extra virgin olive oil

1 red onion, finely sliced

5 cloves garlic

3-inch knob ginger, sliced into matchsticks

1 chilli, finely diced

250g snow peas

200g snow pea shoots

200g snow pea tendrils

1kg prawns, fresh not frozen, deveined and deshelled

400g toasted cashews

Bunch garlic chives, chopped

Bunch coriander, chopped

3 spring onions, chopped

1 tbsp soy sauce

2 tsp cornflour


Add the extra virgin olive oil to a hot pan and add in the onion, ginger, chilli and garlic.

Add the prawns to the pan and toss through. Then add the snow peas, pea shoots and pea tendrils, and the cashews and mix to combine. 

Add the spring onions and herbs to the pan, then the soy sauce and a crack of pepper.

Mix the cornflour with some water and mix to create a slurry. Add to the pan and stir through to thicken the sauce.
