Prawn and Goats Cheese Pizza on a Chickpea Pizza Base


2 cups chickpea flour

1 tbsp nutritional yeast

½ cup water

1 tsp salt, good quality

2 tsp. dried oregano

2 tsp cumin powder

1 tbsp. extra virgin olive oil

1 garlic clove, finely crushed



½ cup tomato passata

300g prawns, shells removed and deveined

1 red chilli, finely chopped

100g goats cheese or feta

1 cup roquette

extra virgin olive oil


In a large bowl, mix together all of the dough ingredients. Knead it into a ball, with a little extra flour, if needed. Place it back into the bowl and cover with plastic and let it rest for 2 hours.


Roll the dough flat and place the pizza on an oiled pizza stone or baking tray. Spoon with passata; place the prawns, sprinkle with chilli, salt and pepper and drizzle with a little olive oil.
Cook in the oven at 180C for 15-20 minutes, until the base is nice and crispy. Serve with a handful of roquette and crumble plenty of goats cheese.
