Prawn and Chorizo Pappardelle


1 packet fresh pappardelle pasta

150g green prawn meat, diced

3 tbsp olive oil

1 tbsp butter

1 lemon, juiced & zested

1 chorizo sausage, diced

½ cup basil, chopped

1 tbsp garlic, crushed

1 green chilli, chopped finely

salt & cracked black pepper


Cook pasta as per packet instructions, about 3-4 minutes in boiling water.

Put the olive oil into a hot pan, add the garlic, chorizo and butter. Add the chilli, lemon zest and stir. Add the prawns and season with salt and pepper.

Just before taking the pan off the heat, add the basil and lemon juice. Then mix in the pasta and combine with the sauce in the pan to finish off the cooking process. Serve hot with a little more cracked pepper.
