Potato Stuffed with Chilli Turkey and Cheese


4 large potatoes, boiled

2 cups cheese, grated

sour cream to serve

salt and pepper to season

spring onions to serve



3 rashers bacon, roughly chopped

500g turkey mince

1 onion, finely chopped

3 cloves garlic, chopped

1 knob of butter

1 long red chilli, finely chopped

1 tsp. cumin

½ bunch coriander

½ bunch of parsley

1 carrot, grated

750ml tomato passata

¼ cup soy sauce

½ cup maple syrup

1 cup cooked beans

extra virgin olive oil


In a hot pot, add extra virgin olive oil, onion, garlic, bacon, turkey mince and brown off. Add remaining mince ingredients and simmer for 30 minutes.

Put the potatoes on a baking tray, mash down and season with salt and paper. Spoon mince mix over top and cover with grated cheese.

Place under griller or in oven on 200C and cook for 10 – 15 minutes until golden on top.
