1 kg nicola potatoes, boiled in skin, cubed
4 rashers bacon, cooked on a tray, finely sliced
1 clove garlic, grated
½ red onion, finely diced
1 bunch parsley, chopped
2 spring onions, chopped
½ lemon, juiced
¼ cup olive oil
½ cup dijon mustard
¼ cup apple cider vinegar
In a small mixing bowl, combine bacon, fresh grated garlic, apple cider vinegar, mustard, onion, lemon juice, olive oil.
In another bowl, gently mix together spring onions, potatoes and parsley.
Pour over dressing and toss to combine.
