Potato Rosti with the Lot

Ingredients

3 cooked potatoes with skin on, grated

3 cloves garlic, grated

¼-½ cup bacon, finely diced

½ red onion, finely diced

2 spring onions, finely sliced

½ cup parsley, chopped

salt

pepper

2-3 tbsp duck fat, or olive oil

Serve with:

Fried Egg with butter

Bacon

Beef Sausages

Tomatoes

Mushrooms

Method

In a bowl, mix together the grated potatoes, garlic, bacon, red onion,  spring onions, parsley, salt and pepper.

 

On a medium heat, place duck fat or oil in a pan and then spread all of the mixture evenly into the pan. When the rosti is browned on one side, flip it over with a large plate and cook the other side until golden brown.

Serve while still warm.
