Potato Masala Samosa

Serves 4
Time 50 minutes


4 boiled potatoes, crumbled 

½ cup frozen peas, blanched 

1 tbsp extra virgin olive oil 

1 tbsp ginger, microplaned 

1 green chilli, chopped 

½ tsp hing (asafoetida) 

4 tbsp coriander leaves, chopped finely

1 tsp lemon juice 

Salt & pepper

¾ tsp cumin seeds

1 tsp garam masala   

¾ tsp red chilli powder

½ tsp cumin powder

½ tsp fennel powder 


375g chilled fillo pastry 

Sesame seeds

⅓ cup ghee, melted


Preheat the oven to 180C.

Prep the filo pastry with ghee.

In a non-stick pan head cumin seeds. Add ginger, green peas and spices, then add potatoes, salt and pepper and mix through. Add lemon and allow the mix to cool.

Fill fillo with potato masala mix.

Brush with oil or ghee and bake for 20-30 minutes, or until golden and flaky.
