2kg washed potatoes, sliced 1cm thick
2 brown onions, sliced + 1-2 tbsp chicken powder stock
1.5-2L water mixed with 4 tbsp chicken stock powder
300g bacon, diced
1 bunch thyme
1 bunch parsley, finely chopped
Preheat the oven to 200C.
Add sliced onions to your tray and season with 1-2 tbsp chicken stock powder.
Stir the thyme and ¾ of the chopped bacon through the onions, reserving the rest for the top of the dish.
Arrange the sliced potatoes in rows on top of the onions. Add bacon and butter to the potatoes. Pour the stock over, it should come about ¾ of the way up the dish, add a little more water if needed.
Place in the hot oven for 40-50 minutes.
Sprinkle with chopped parsley to serve.
