2 large baking potatoes, peeled
¼ cup unsalted butter
3-4 rashes of bacon, chopped
5 cloves peeled garlic, roughly chopped
salt and pepper
ovaline or bocconcini cheese
Preheat the oven 180C.
Boil the potatoes for 20 minutes and let them cool slightly before slicing them into 1cm thick slices. Pan fry bacon until golden. Add garlic to the pan and stir together with the bacon.
Line the bottom of a baking dish with a single layer of potato slices, the bacon and garlic, butter dcattered all over the dish, tear bocconcini cheese and sprinkle with thyme, salt and pepper. Bake for 10 – 20 minutes, or until golden on top.
