Pork Belly Skewers with Apple & Cabbage Salad

Serves 4
Time 30 minutes + marinating time

Ingredients

Skewers

500g pork belly cut into cubes

2 spring onions, finely sliced

1 stick lemongrass, diced finely

1 tbsp coconut oil, melted

2 tsp miso paste

2-3 tbsp soy sauce

1 tsp sesame oil

1 tbsp mirin

1 red chilli, finely sliced

1 tbsp grated ginger

 

Salad

½ head savoury cabbage, finely sliced

1 green apple, finely shaved

1 handful kale, torn

2 tbsp olive oil

½ bunch coriander, finely chopped

1 red chilli, finely sliced

¼ cup peanuts, crushed

½ tbsp lemon juice

Salt and pepper, to taste

Method

 

In a bowl combine all of the marinate ingredients and mix well. Toss pork in marinade and set aside in fridge for at least 30 minutes and up to 4 hours. Thread pork onto skewers.

Pre-heat a BBQ or grill plate and cook the pork skewers on each side until golden and crispy. Serve with salad.

To make the salad, combine all ingredients in a bowl, gently toss, season to taste and top with extra coriander and peanuts.
