Polenta Balls with Passionfruit


3 cups soy milk

1 cup fine polenta

1 tbls each of lemon and orange rind (more for garnish)

2 tbls maple syrup

½ cup passionfruit pulp

12-15 Tiny patty cases


Heat your milk in a non stick saucepan. Bring it to a simmer. Slowly pour the polenta in and keep whisking. It will get very thick and hot, so be careful. It will take about 5 minutes to cook. Add the rinds, stir and turn off the heat. Stir through the maple syrup and taste. Add more rind or syrup if you like.

Allow it to cool a little then place teaspoon full’s into the cases. They will start to set almost immediately. Put in the fridge until ready to serve. Drizzle about 1 tsp of passionfruit pulp over the balls before serving and sprinkle with more rind.
