Ingredients
2 fillets Red Emperor
4 slices of fresh ginger
1 tbls tamari
1 tbls sezchuan pepper
2 tbls sesame seeds
2 tbls shiro miso paste
½ cup fresh orange juice
1 tbls coconut palm sugar
1 tbls tamari
1 tbls rice wine vinegar
1 tbls mirin
1 tbls ginger, grated
2 spring onions, finely chopped
1 tbls chives, chopped
Method
Place the fish in a deep pan and cover with water. Add the ginger, tamari and sezchuan pepper. Poach the fish over a gentle simmer for about 5 minutes.
Meanwhile grind the sesame seeds either in a mortar and pestle or spice/coffee grinder. Place these in a bowl and mix with the miso paste, OJ, sugar, vinegar, mirin and ginger. Taste and adjust as you like.
To serve, place the fish in a shallow bowl then pour over the sauce. Scatter with spring onions and chives. Serve with extra sauce on the side and garnish with orange wedges.
