Pepperoni Mac n Cheese

Serves 4
Time 25 minutes


500g macaroni pasta
3 cups grated mozzarella
1¼ cup parmesan, grated

2 cups milk 

¼ cup tomato paste

1 tsp dried oregano

½ tbsp chilli flakes
100g butter 

3 tbsp plain flour

150g pepperoni, sliced


Preheat the oven to 220°C.

Cook pasta as per packet directions. 

Melt the butter in the pan, removing from direct heat so it doesn’t burn.

Add flour and cook for 1 minute, stirring constantly.

Pour milk and tomato paste into the pan and stir until smooth.

Add mozzarella, 1 cup parmesan, oregano and chilli, and mix until smooth.

Add salt and pepper to taste. Add pasta and stir until the pasta is completely coated.
Pour pasta into a baking dish, and spread evenly.

Layer the pepperoni over the macaroni and scatter the remaining pasta on top.

Bake in the oven for 10-15 minutes or until pepperoni is crispy and pasta is bubbling.
