2 cups chocolate chips
2 tbsp butter
½ cup smooth peanut butter
¼ cup icing sugar, sifted
1 tbsp vanilla extract
Pinch of salt
Melt your chocolate in a heatproof bowl over a pot of boiling water. Once melted, stir through the butter.
Mix vanilla, sifted icing sugar, a pinch of salt and peanut butter until it all comes together. Roll the peanut butter into a log and divide by 6.
Line a muffin tin with paper cups.
Pour 2 tablespoons of chocolate into the paper cups. Gently flatten the portioned peanut butter into disks, place in the chocolate and cover with remaining melted chocolate.
Chill in the fridge for 30 minutes, or until set.
