1 tsp cumin seeds, toasted
1 tsp fenugreek, toasted
1 tsp fennel, toasted
1 tsp yellow mustard seeds, toasted
1 tsp nigella seeds, toasted
1 tsp sesame seeds, toasted
2 tbls brown rice flour (optional)
2 fillets of John Dory, or another firm white fish
1 tbls rice bran or olive oil
Garnish with coriander leaves and lime wedges
Grind the spices and seeds in either a spice/coffee grinder or in a mortar and pestle until quite fine.
Mix together on a flat plate with the flour.
Cut your fish into 3cm pieces, then pat dry with a paper towel.
Press the fish into the spice mixture. Heat your oil the fry the fish, until golden on both sides.
Drain on paper towel. Serve with lime wedges and coriander leaves.
