Pancakes with Berries

Serves 4
Time 40 minutes


2 eggs 

1 ½ cups milk 

1 ½ self-raising flour

2 tbsp butter, melted

1 tsp baking powder

1 tsp baking soda

2 tbsp sugar

1 tsp vanilla bean paste


To serve 

Sour cream 

Maple syrup

Variety of fresh berries 

Icing sugar, to garnish 

Mint, to garnish (optional)


Whisk eggs to break up, whisk in milk. Add flour and whisk until smooth before adding the butter, baking powder, baking soda, sugar and vanilla bean paste. Whisk until it forms a smooth batter. 

Heat a large pan over medium heat. Melt a little butter and spoon your pancake batter onto the pan. Cook for a few minutes or until bubbles appear, flip and cook for a further 1-2 minutes. Repeat until all of the batter is used. Keep the cooked pancakes on a plate covered with a clean tea towel to keep warm. 

Serve the pancakes with fresh berries, cream, maple syrup and icing sugar.
