1 whole duck, roasted, meat removed
Cucumber, cut into strips
Lettuce, cut into strips
Rice noodles, cooked
½ bunch of coriander
4 spring onions, green cut into 3cm batons
Deep fried shallots
1 packet Rice Papers
1 knob of ginger, grated
2 cloves of garlic, grated
1 long red Chilli, chopped
2 tbsp Hoisin Sauce
1 tbsp Organic Soy Sauce
To make the dipping sauce, mix all ingredients together in a small bowl and set aside.
Dip a sheet of rice paper roll into a plate of water for a few seconds.
Add the ingredients to the middle of the softened rice paper roll – some cucumber, rice noodles, lettuce, spring onions, coriander, peanuts, sesame seeds, deep fried shallots, pickled ginger, mayonnaise and some cooked duck meat.
Roll the rice paper carefully tucking in the sides, and repeat with the rest of the rice paper roll sheets.
Serve with the dipping sauce.
