Oriental BBQ Pork Omelette


500g BBQ pork

6 whole eggs

2 clove garlic, micro planed

1 knob ginger, micro planed

½ red onion, finely diced

2 tbsp. AYAM soy sauce

2 tbsp. spring onions, sliced

1 swiss brown mushroom, sliced

1 small bunch of enoki mushrooms, ends cut off

olive oil, for frying

AYAM hoi sin sauce, to serve

AYAM hot chilli sauce, to serve

Kewpie mayonnaise, to serve

salt and pepper



1 tbsp. AYAM hoi sin sauce

½ bunch coriander, chopped

¼ bunch mint, chopped

½ cup bean shoots

¼ cup deep fried shallots

2 tbsp. sesame seeds


Crack eggs in a bowl, add soy sauce, salt and pepper and whisk.

Heat olive oil in a pan and add onion, garlic, ginger, mushrooms and spring onions and cook for 5 minutes. Add pork and egg mixture to pan and cook.

Mix salad ingredients in a bowl with hoi sin sauce. Put salad on omelette and fold in half. Serve with hot chilli sauce, hoi sin sauce and mayonnaise.
