Orange Summer Salad


Juice of 2 oranges
2 tbsp balsamic vinegar
2 tbsp extra virgin olive or hemp seed oil
1 tsp wholegrain mustard
1 tbsp honey

Main Dish

500g baby spinach, washed
1 blood orange, peeled and sliced
2 avocados, sliced
4-6 radishes, sliced
½ fennel, thinly sliced
¼ bunch mint, leaves picked
¼ cup pumpkin seeds
Zest of ½ orange


Add all of the dressing ingredients to a lidded jar, then seal and shake to combine. Set aside to infuse while you prepare the salad.

Spread the baby spinach on a serving dish. Top with the blood orange, avocado, radish, fennel, mint leaves, pumpkin seeds and orange zest. Season with salt and pepper.

Pour over the dressing just before serving and toss to coat.
