One Pot Spaghetti on Toast


1 onion, diced
2 cloves garlic, chopped
1 carrot, grated
1 stick celery, grated
1 knob butter
¼ cup extra-virgin olive oil
2 bay leaves
500 gms minced beef
6 rashers bacon, diced
1 long red chilli, sliced
1 litre chicken stock
1 litre tomato passata
1 bunch parsley, chopped
250 gms spaghetti, broken into pieces
salt and pepper

1 loaf sour dough bread
parmesan cheese


In a large heavy based fry pan, heat oil. Add minced beef and bacon. Cook for 5 minutes, breaking up any lumps, until nicely browned.
Add onion, garlic, celery, carrot, bay leaves, chilli, salt and pepper. Sauté for 3 – 5 minutes or until vegetables soften.
Pour in passata and stock. Add spaghetti and stir well.
Reduce heat and simmer for 10 minutes or until pasta is al dente.
Serve on slices of toasted sour dough bread.
