1 cup cashews
1 tsp vanilla extract
1 tbsp golden monk fruit raw sugar substitute
3 tbsp no added sugar golden malt flavoured syrup
1 cup almond flour
1 cup cocoa powder
1 tbsp icing powder classic monkfruit sweetener, to serve
Line a square tray with plastic wrap.
In a food processor blitz cashews, vanilla extract, golden sugar replacement, golden malt syrup until it forms a rough paste.
Transfer to a large bowl and stir through the almond flour and cocoa powder. Pour into the lined tray, push the dough to the edges and smooth out. Freeze for 20 minutes or until firm.
Slice and dust with icing sugar replacement.
