Mushroom, Tofu and Pesto parcels

Ingredients

Mountain Bread

½ Cup Button Mushrooms

Olive Oil Spray

½ Cup Smoked Tofu grated.

1 tbls Pesto

Method

Cut Mountain Bread into quarters and press into muffin trays. Spray with Olive Oil. Place into the oven at 180 C until for 5 mins until brown and crunchy. Take out of the oven and allow to cool for 2 minutes.

Fry diced button mushrooms, smoked tofu shredded, pinch salt in fry pan until mushrooms are cooked. Add 1 tablespoon of pesto to pan.

Add tablespoon of mixture to mountain bread toasted cups and enjoy.
