Mushroom & Bacon Penne


250 grams penne
3 cloves garlic, crushed
½ red onion, diced
1 bunch basil leaves, chopped
1 bunch parsley, roughly chopped
2 cups assorted mushrooms, chopped
2 rashers bacon, diced
1 tbsp. butter
1 cup cream
¼ cup white wine
1 tbsp. olive oil
salt & pepper



Cook pasta in a salted boiling water as per packet instructions.

Heat olive oil in a frying pan over a medium flame.
Sauté bacon, garlic and onion for 2 – 3 minutes or until onions soften.
Add butter and assorted mushrooms.
Season with salt and pepper.
Cook for 2 – 3 minutes or until mushrooms have softened.
Stir through, wine, cream and herbs.
