Moroccan Hummus Pasta

Homemade Moroccan Hummus

2 cups cooked chickpeas

1 tbsp rice malt syrup

2 garlic, cloves, microplaned

1 lemon, juice

¼ cup extra virgin olive oil

1 tsp cumin, ground

1 tsp turmeric, ground

1 pinch smoked paprika

Salt & pepper

1 tbsp raisins 

¼ cup fresh coriander, chopped 


1 packet dried red lentil pasta 

1 cup Homemade Moroccan Hummus 

½ cup cherry tomatoes, halved

⅓ cup unsweetened oat milk

¼ cup fresh parsley, chopped 

¼ cup fresh basil, chopped 

Black olives

Vegan parmesan

Nutritional yeast

Red pepper flakes

Additional basil or parsley

Salt & pepper


Cook pasta according to package directions. 

Blend all hummus ingredients except raisins and coriander and salt in a food processor and process until combined and smooth. Stir through raisins and coriander. 

Mix through hummus and fresh cherry tomatoes. 

Sprinkle with herbs, olives and nutritional yeast and additional basil or parsley.
