Mojito Marinade

Ingredients

1 shallot, finely chopped
2 limes, juiced
¼ cup rum
1 tbsp. honey
pinch of cumin
2 tbsp. olive oil
½ bunch coriander

 

Method

Using a stick blender, blend all ingredients until smooth.

Pour marinade over fish or chicken.

Cover with cling film and transfer to the fridge and let sit for at least 20 minutes or overnight.
