Moist Chia Fruit Slice

Serves 10 sliced

Ingredients

2 cup dried fruit, mixed sultanas, dates, apricots and apple, soaked overnight in 1 cup of water

1 cup soy milk

¼ cup chia seeds

¼ – ½ cup almonds and pepitas, chopped

1/2 cup honey

1 ¾ cup coconut flour

1 tsp baking soda (gluten-free)

1/2 tsp sea salt

½ cup virgin coconut oil, melted

1 tsp vanilla bean

1 tsp cinnamon, powder

1 tsp chilli, powder

Method

Preheat the oven to 160°C. Line a slice tin, 18cm x 28cm, with baking paper.

Drain the fruit and keep the soaking liquid. Roughly chop and add to a small bowl along with coconut oil, vanilla, honey, soy milk and half of the soaking liquid. Gently mix.

In a large bowl, combine the chia seeds, nuts, coconut flour, baking soda, salt, cinnamon and chilli. Mix well and then fold in wet ingredients.

Transfer to baking tin, making sure the top is flat and even. Place in the oven and cook for approx. 20 – 30 minutes. Once cooked, leave to cool and then slice and serve with a cup of herbal tea.
