Ingredients
1 x Punnet Super Tom Tomatoes
1 x Punnet Sweet Berry Truss Tomatoes
1 x Punnet Pepper Tom Tomatoes
¼ Bunch Parsley
2 x Spring Onions
¼ Cup Red Pepper (Capsicum)
2 x Slices Bread
½ Cup of Macadamia Nuts
¼ Cup Kalamata Olives
½ Avocado
Dressing
¼ Cup White Wine Vinegar
Black Pepper
Salt
Extra Virgin Olive Oil
½ Cup Goats Cheese
4-6 Anchovy Fillets
Method
Slice all your varieties of tomatoes into quarters and add to a bowl with roughly chopped herbs. Add macadamia nuts, cubed bread, olives, avocado and sliced spring onions to the bowl and mix. Season with salt and pepper and add olive oil and gently mix. Scoop some goats cheese on top along with some anchovies and some of the anchovy oil.
