1 cup chopped mixed nuts and seeds: chia, sesame, almond, macadamia,
2 cup organic buckwheat flour
1 cup organic or sulfur free sultanas
2 tsp. baking soda
1 tsp. salt
2 cup mashed bananas
1 cup milk
½ cup of agave nectar (or honey, or maple syrup)
¼ cup of extra virgin olive oil
2 tsp. cinnamon
Mix nuts and seeds, flour, baking powder and salt in one bowl.
In another bowl mash bananas and add milk, agave, olive oil, cinnamon and egg
Stir banana mixture into flour just until moistened. (Batter will be lumpy)
Pour into greased mini muffin tins and bake 15 to 20 minutes at 200C.
