Mexican Street Corn

Serves 4
Time 10 minutes


4 corn on the cobs, pull peel back

1 tbsp extra virgin olive oil

1/4 cup mayonnaise

1/2 cup sour cream 

1/2 cup manchego cheese, shaved 

1/8 tsp chipotle chilli powder

1/4 tsp cumin

1 garlic clove, microplaned 

2 tbsp coriander, chopped

4 limes, wedges and zest


Brush corn with extra virgin olive oil and grill on every side for around 3-4 mins or until you can see grill lines.

In a medium bowl mix mayonnaise, sour cream, manchego cheese, chipotle chilli powder, cumin, garlic and coriander.

Coat the corn in the creamy mixture.

Sprinkle with extra manchego, coriander, chilli powder and limes.
