150 g vegetable or olive oil
500 g paneer (cottage cheese)
bay leaf
1 clove
2 black cardamom pods
1 cinnamon stick
1 tsp ground cumin
1 tsp chilli powder
½ tsp ground turmeric
1 tsp ground coriander
½ tsp Garam masala
fresh ginger, peeled & chopped
1 cup chicken stock
250 g peas
salt
Method
Method:
Head the oil in a deep heavy based fry pan over a medium heat, add paneer & fry
for 5 mins or until golden brown on all of the sides.
Remove and drain.
Add the bay leaf, whole spices & fry (1 minute) until fragrant
Add the ground spices
Season
Add Chicken or vegetable stock, ginger and peas.
Stir over a medium heat for 2 minutes
Add paneer.
Bring to the boil
Reduce heat cover & simmer until peas are just cooked
Season
