Maruya Banana Fritters

Serves 6
Time 20 minutes


2 ripe bananas, mashed
2 eggs, lightly beaten
1 ½ tsp baking powder
1 cup SR flour
1 tbsp coconut sugar
1 ½ tsp vanilla extract
2 cups vegetable oil
½ tsp salt

To Serve

Vanilla ice-cream
Icing sugar
Caramel sauce


In a large bowl, mix together the mashed banana, eggs, baking powder and flour until combined. Stir through the coconut sugar and vanilla, and add a little extra flour if the mixture is too liquid.

Heat the oil in a small pot for deep frying, then using an oiled spoon, carefully drop large spoonfuls of the batter into the hot oil. Fry for 3-5 minutes on each side until golden, then remove from the oil and drain on paper towel.

Dust with icing sugar and serve hot with vanilla ice-cream and caramel sauce, if desired.
