Maple Syrup Rice Pudding

1 ½ cup arborio rice
¼ cup sugar
500ml milk
300ml cream
2 cardamon pods
1 tsp ground cinnamon
¼ cup maple syrup
1 vanilla pod, split
3 yolks


Preheat the oven to 180C. Combine the sugar, milk, cream, cardamom, cinnamon, maple syrup, vanilla pod in a pot. Bring to the boil and add the rice. Continue to stir until the rice cooks, about 15 minutes.

Remove from the heat and stir in the yolks. Transfer to a baking dish and bake for 25 – 30 minutes until glazed on top.
